Diets Yield: 10 2-inch lollipops
1 bag Isomelts
gel food coloring, if desired
Gefen Sprinkles, dragees, icing decorations, etc.
Place your silicone molds on a sheet pan. Position lollipop sticks in the mold a quarter inch into the pop. Place desired sprinkles or candies into the molds.
For microwave, place Isomelts in a microwave-safe cup (e.g. silicone). Melt in 20-second intervals until liquid and bubbles form. For stovetop: place Isomelts in a pot over low-to-medium heat. Stir gently as the nibs begin to melt. Do not overheat.
Once the Isomelts are heated, allow it to settle for 45 to 60 seconds so that the bubbles can dissipate. Create custom colors by carefully mixing in gel food color to the melted Isomalt while it is still bubbling.
Pour melted Isomelts into the mold cavities, making sure to fill entirely and cover the sprinkles and the end of the stick. Let set at room temperature until candy is hard, about 10 minutes. Gently release from mold. If bubbles formed in your lollipops, carefully pass over them with a kitchen blow torch. This will clear air bubbles and cloudiness.
Store finished isomalt creations in an airtight container, at room temperature, away from direct sunlight. Do not store in the refrigerator or freezer; the condensation will break down the isomalt.
