Cucumber Avocado Roll-ups

Place cucumbers slices in salted ice water. Refrigerate overnight or for at least 6 hours.
Combine remaining ingredients for guacamole.
Drain water from cucumbers and spread each slice with guacamole. Roll up and secure with a toothpick.
