Diets Use up any leftover pita to make these quick pita chips, which is combined with some greens, grated feta and a simple dressing. This refreshing salad is so delicious and is a great addition to a dairy Seudat Shlishit or any dairy meal. Watch 4 Amazing Things for more great food with Victoria!
1 English cucumber, diced
3 celery ribs, diced
1/2 cup fresh parsley leaves, chopped
1 pita bread, cut into squares (halves separated)
salt, for sprinkling
Gefen Garlic Powder, for sprinkling
4 ounces Ta’amti Feta Cheese, grated
2 tablespoons Kedem White Wine Vinegar
2 tablespoons olive oil
Preheat the oven to 400 degrees Fahrenheit. Grease a baking sheet.
Add pita chip cubes and sprinkle with salt and garlic powder. Spray with nonstick cooking spray and bake until pita chips are crunchy and golden at the edges, about 10 minutes.
In a bowl, combine cucumber, celery, parsley, and feta cheese.
Top with pita chips and drizzle with dressing. Toss to combine and enjoy.
