Diets The surprise filling makes these muffins dessert-worthy!
Yield 12 muffins
1 stick margarine, room temperature
1/2 teaspoon vanilla extract
1/2 cup sugar
2 eggs
3/4 cup flour
1/2 teaspoon baking powder
1/4 cup instant vanilla pudding
3 tablespoons parve milk
1 Cortland or other tart apple, grated
1 pound Bavarian Cream (available at The Peppermill)
1/3 cup light brown sugar
1 teaspoon cinnamon
1/4 cup oil
2/3 cup flour
Preheat oven to 350 degrees. Line 12 muffin cups or prepare 12 paper baking cups.
Beat margarine with sugar and vanilla until creamy. Add eggs and beat to combine. Stir together flour, baking powder, and vanilla pudding. Add dry ingredients to batter, alternating with the parve milk. Don’t over mix.
Fill each muffin cups half full with batter. Add one tablespoon Bavarian Cream and one teaspoon grated apples. Top with one tablespoon batter.
Mix streusel ingredients. Sprinkle on each muffin.
Bake 30 minutes or until a cake tester comes out clean.
