Diets Custard toast is easy, healthy, requires nothing more than a couple of standard breakfast ingredients, and…wait for it…it’s reminiscent of cheesecake! Cheesecake for breakfast? Yup. Because yes, you can have your cake and eat it healthily too.
1 large egg
3 tablespoons Greek yogurt
2–3 teaspoons Gefen Maple Syrup or honey
lemon zest, Gefen Cinnamon, nutmeg, or vanilla extract (optional)
2–3 slices of bread
blueberries
strawberries
cranberries
cherries
nectarines
peaches
apricots
mangoes
dark chocolate chips
white chocolate chips
Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper and set aside. (You can also make this in a Betty Crocker pizza maker.)
In a bowl, whisk together the egg, yogurt, maple syrup, and optional flavoring of your choice.
Using your fingers or the back of a fork, press down the center of each slice of bread to create a space for the yogurt mixture. Make sure not to tear the bread.
Spoon the mixture into the indentation and add the toppings of your choice.
Place on the prepared baking sheet and bake for eight to 12 minutes, until the edges are lightly browned and the custard center is set.
Serve as is or top with maple syrup and/or confectioners’ sugar.
