1 head romaine lettuce
1 cup (approximately) button mushrooms sliced crosswise
1 and 1/2 cups (approximately) cherry or grape tomatoes
1 green onion, cleaned and sliced thinly
2 cups large garlic croutons
1 clove garlic, crushed or 1 cube Gefen Frozen Garlic
1/2 cup oil
3 heaping tablespoons cottage cheese
2 teaspoons sugar
1/4 cup Gefen White Vinegar
2 teaspoons water
1 (8-ounce) package low-fat shredded muenster cheese
Place all ingredients for dressing (excluding low fat muenster cheese) into a large bowl and blend together using an immersion blender (works in standard blender as well). Refrigerate.
Cut or tear all the lettuce into bite-size pieces. Add the remaining vegetables and toss with desired amount of dressing. Sprinkle with low fat muenster cheese and garlic croutons, toss lightly again, and it’s ready to serve!
