This salad is insanely delicious while simultaneously classy enough to be served at any event. Feel free to chop up your lettuce for a more versatile family-friendly salad. This Caesar dressing is sure to become a favorite. It’s dairy free and can be enjoyed anytime.
3 heads romaine lettuce, washed and checked
2 cans Glicks Chickpeas, drained, rinsed, and dried
oil, for drizzling
salt, to taste
black pepper, to taste
garlic powder, to taste
paprika, to taste
shaved Tuscanini Parmesan, for serving
1/2 cup Gefen Mayonnaise
1 tablespoon Haddar Dijon Mustard
1 tablespoon Glicks Soy Sauce (use a wheat-free version for gluten-free)
1 tablespoon nutritional yeast
1 tablespoon water
black pepper, to taste
Preheat oven to 400 degrees Fahrenheit.
Drizzle chickpeas with olive oil, and sprinkle with salt, pepper, garlic powder and paprika.
Bake for 20 minutes until crispy.
To prepare dressing, whisk all ingredients until fully combined.
To assemble, arrange lettuce on a plate.
Top with warm roasted chickpeas and parmesan shavings, and drizzle with dressing.
