Dairy-Free Tzatziki

Main ingredients

  • 4 Persian cucumbers                            

  • 3 cups Gefen Mayonnaise

  • 3 garlic cloves, chopped

  • 2 tablespoons lemon juice and 1 teaspoon lemon zest

  • 1/4 cup dill, rough chopped

  • 1/4 cup mint, rough chopped

  • salt

  • pepper

Directions

Prepare the Tzatziki

Cut cucumbers in half, deseed then grate.  Wring them out in a clean kitchen towel to remove the excess liquid. You should have around two cups of shredded cucumber.

To a food processor add mayo, shredded cucumber, garlic, lemon juice, lemon zest,  dill, and mint.  Blend until all the ingredients are incorporated.  Taste and season with salt and pepper.
