A Greek sauce traditionally made from yogurt, dill, and cucumber. Here is a parve version that goes great with grilled chicken. Watch Chef Gabe make this and two other sauces here!
4 Persian cucumbers
3 cups Gefen Mayonnaise
3 garlic cloves, chopped
2 tablespoons lemon juice and 1 teaspoon lemon zest
1/4 cup dill, rough chopped
1/4 cup mint, rough chopped
salt
pepper
Cut cucumbers in half, deseed then grate. Wring them out in a clean kitchen towel to remove the excess liquid. You should have around two cups of shredded cucumber.
To a food processor add mayo, shredded cucumber, garlic, lemon juice, lemon zest, dill, and mint. Blend until all the ingredients are incorporated. Taste and season with salt and pepper.
