Dasi’s Pesach Finger-Lickin’ Chicken Fingers

Ingredients

Chicken Fingers

  • 2 pounds boneless chicken breast, cut into nuggets or strips

  • 1 and 1/4 cups potato starch

  • 3 eggs

  • 1 and 1/2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon paprika

  • 1/2 teaspoon garlic powder

  • 1 and 1/2 tablespoons brown sugar

  • oil, for frying

Sweet and Sour Sauce

  • 1/2 cup ketchup

  • 3/4 cup cold water

  • 2 tablespoons lemon juice

  • 1 and 1/2 cups sugar

  • 1/2 cup brown sugar

Directions

Prepare the Pesach Finger-Lickin’ Chicken Fingers with Sweet and Sour Sauce

1.

Combine the batter ingredients. Mix in the chicken pieces and coat well. Set aside.

2.

Mix the ingredients for the sauce in a small pot. Boil until well combined. (You will only use a small portion of sauce for this recipe. The unused sauce freezes well.)

3.

Deep fry the chicken pieces quickly in hot oil. Don’t overcrowd the pan. Fry them until golden. Serve with a bowl of sweet and sour sauce for dipping.

I used this sauce for mini chicken bites just fried in oil, was really good and tasty. Thanks for the recipe!
