Diets Chanukah is the only time of year that I deep-fry, so we cram all our cravings into this one week. This recipe is a new one for my family, and it’s fun!
oil, such as Gefen Canola Oil, for frying
2 cups frozen pancake batter, defrosted (or powdered pancake batter prepared according to package directions)
2 cups graham cracker crumbs
8 ounces (225 grams) regular-sized marshmallows, such as Gefen
melted chocolate, such as Elite Bittersweet Chocolate or strawberry jam, for serving (optional)
Heat the oil to 375 degrees Fahrenheit (175 degrees Celsius) in a large pot.
While the oil is heating, place the pancake batter in one bowl and graham cracker crumbs in another bowl. Coat the marshmallows by dipping each one into the batter until fully coated. Roll the coated marshmallows in the graham cracker crumbs to coat evenly.
Carefully place the marshmallows into the hot oil and fry for 30–60 seconds, or until golden brown.
Use a slotted spoon to remove the marshmallows from the oil and place them on a cooling rack or paper-towel-lined plate. Serve with melted chocolate or strawberry jam for dipping.
