When we spend 8 days eating fried foods, it’s nice to have a healthy but fun alternative. Next time you’re standing at the stove frying up some latkes, reserve some of the batter to make these latke croutons. It will turn this salad into a most delicious and fun appetizer or main. Happy Chanukah!
