A creamy seasoned tahini that is much richer than a traditional tahini.
1 large onion (about 3-4 inches in diameter)
1 large red pepper
1/2 cup of raw or toasted sesame seeds
1 cup of olive oil
1 teaspoon salt
1/2 teaspoon pepper
1 heaping teaspoon Mrs. Dash salt free seasoning
Juice of 1 whole lemon (about 1/4 cup of lemon juice)
Small amount of water, if required.
Microwave the onion until soft. This will probably be about 6 minutes. Cook it in a bowl and save any liquid that is in the bowl.
Cut the red pepper into strips and microwave until soft, about 4 minutes.
In a large blender, add the olive oil, salt, Mrs Dash, lemon juice, cooked onion with any juice from its bowl, and the microwaved red pepper strips.
Blend this until creamy. (About a minute in my Blendtec blender).
Add the sesame seeds and blend again until creamy. If required add water if the mixture is too thick to blend. Add only enough water to allow the mixture to blend. Add water tablespoon by tablespoon, but only if required.
Refrigerate and use the next day to let the flavors meld.
