If you love dill as much as I do, this recipe is for you. This one-pan dinner is a winner!
1 bunch fresh dill, chopped
2 cubes Gefen Frozen Garlic
1 tablespoon oil, such as Gefen Canola Oil
pinch of Gefen Salt
pinch of pepper
1 (8-ounce) box rice and vermicelli (such as Goodman’s)
1 tablespoon oil, such as Gefen Canola Oil
1 and 1/2 pounds chicken breast, cut into 1-inch pieces
2 and 1/2 cups water
Prepare pesto: In a bowl, combine dill, garlic, oil, salt and pepper. Set aside.
Prepare chicken and rice: In a deep frying pan, stir together rice and vermicelli, the spice packet included in the box, and oil.
In a bowl, toss chicken with prepared dill pesto until evenly coated. Place chicken on top of the rice mixture.
Add water and bring to a boil, then reduce heat and cover. Cook about 20 minutes, until water is fully absorbed.
