Easy Herby Chicken and Rice is the ultimate one-pot weeknight dinner—flavorful, fuss-free, and family-friendly. Tender chicken drumsticks are marinated with frozen garlic, parsley, dill, and lemon juice, infusing the meat with fresh herby brightness. The chicken bakes right on top of a bed of seasoned rice, soaking up all the savory juices as it cooks. With minimal prep and no stovetop time, this dish delivers comforting, aromatic results straight from the oven in just over an hour, making it perfect for busy evenings when you still want a homemade, wholesome meal.
10 chicken drumsticks
4 cubes Gefen Frozen Garlic
4 cubes Gefen Frozen Parsley
4 cubes Gefen Frozen Dill
1 tablespoon oil
juice of 1 lemon or 3 tablespoons Gefen Lemon Juice
salt, to taste
pepper, to taste
2 cups rice
3 and 1/2 cups water
2 tablespoons chicken consommé
salt, to taste
pepper, to taste
In a ziplock bag, combine the chicken drumsticks, garlic cubes, parsley cubes, dill cubes, lemon juice, oil, salt, and pepper. Seal the bag and refrigerate for at least one hour, or preferably overnight, to marinate.
Preheat the oven to 375 degrees Fahrenheit.
In a large baking dish, spread the rice evenly across the bottom. Pour in the water, chicken consommé, and season with salt and pepper.
Arrange the marinated chicken drumsticks on top of the rice, ensuring they are evenly spaced.
Cover the dish tightly with aluminum foil.
Bake in the preheated oven for one hour.
After one hour, remove the foil and check the chicken for doneness. If needed, bake uncovered for an additional 10-15 minutes until the chicken reaches an internal temperature of 165 degrees Fahrenheit and the rice is fully cooked.
