If you haven’t tried the viral doner kebab yet, now’s your chance—and this version makes it even easier. Turning simple ground meat into this incredible supper is a must-try, and it’s guaranteed to be a hit.
2 pounds ground meat
2 teaspoons Gefen Onion Powder
2 and 1/2 tablespoons Pereg Shawarma Seasoning
3 tablespoons mayonnaise
pita or laffa, for serving
chummus
babaganoush
cabbage salad
diced cucumbers
tahini
In a large bowl, combine the ground meat, onion powder, shawarma seasoning, and mayonnaise. Mix very well until the mixture is smooth and fully combined.
Place about one quarter of the meat mixture onto a sheet of parchment paper and flatten it slightly. Cover with a second piece of parchment that has been lightly sprayed with oil, then use a rolling pin to roll the meat very thin, making sure to leave about one inch of parchment uncovered at one end. Peel off the top sheet of parchment. Starting from the side without meat, fold the parchment up with the meat inside, then place it on a baking sheet. Repeat with the remaining meat.
Bake in a preheated oven at 400 degrees Fahrenheit (200 degrees Celsius) for 30 minutes. Let cool slightly, then carefully unroll the parchment. Use two forks to break the meat into pieces.
Serve the doner meat inside a pita or lafa, or over a salad. Fill with chummus, babaganoush, cabbage salad, cucumbers, and tahini.

Can I freeze the the “logs” raw? Asking cuz there’s mayonnaise in it
Sure, you should be able to freeze it.
Can I use turkey or half turkey/half ground beef for this?
Yes! Someone tried it with a chicken/beef combo and said it came out delicious! I’m sure it’ll also be great with turkey 🙂
Great recipe! I made this for Friday night dinner. It was so yummy and fun that my family requested leftovers on Shabbos day. So the other food I made will be for tonight.
Looks delicious, I definitely want to try this one.
