Dragon Fruit Sorbet, 3 Ways

I need to crowdsource my recipe ideas more often, because I ended up in a direction I wouldn’t have gone on my own! Thanks, Chaya Surie, for the great idea to use a popular national coffee chain’s dragon fruit refresher drink as the inspo for this.

Ingredients

Basic Dragon Fruit Sorbet

  • 1 tablespoon sugar (optional)

Additional Ingredients for Dragon Drink Sorbet

  • 16 ounces (450 grams) coconut sorbet

Additional Ingredients for Dragon Drink with a Kick

  • 2 cups peach juice

Directions

Prepare the Basic Dragon Fruit Sorbet

1.

Blend the fruit in a food processor until broken down and roughly the size of rice, about three minutes.

2.

With the processor running, add lime juice and sugar, if using, and continue processing until smooth, approximately 10 minutes.

3.

Transfer to an airtight container and freeze for at least an hour, or until serving.

Prepare the Dragon Drink Sorbet Version

1.

Add 16 ounces (450 grams) coconut sorbet or vanilla pareve ice cream with the fruit.

2.

Blend as instructed.

Prepare the Dragon Drink With A Kick

1.

Add 1/2 cup vodka to the mixture above and freeze as directed.

2.

To serve, pour four cups white grape juice and two cups peach juice or fruit juice of your choice into a large pitcher.

3.

Scoop in sorbet and stir until it turns into a slushy drink.

Notes:

Important note: The Dragon Drink with a Kick cannot be made on Shabbos.
