Dried Cranberry Salad with Grape Vinaigrette

Ingredients

Salad

  • 5 ounces baby kale or arugula

  • 2 peaches, sliced

  • 1 cup grapes, halved

  • 1/4 cup mixed sunflower seeds, pepitas, or soy nuts

  • 3 tablespoons sweetened dried cranberries

Grape Vinaigrette

  • 1/4 cup Kedem Grape Juice

  • 2 tablespoons balsamic vinegar

  • 2 tablespoons olive oil

  • 2 tablespoons honey

  • 1/2 tablespoon Dijon mustard

  • 1/2 teaspoon salt

  • dash of black pepper

Directions

Prepare the Salad

1.

In a large bowl, combine all salad ingredients.

Whisk together vinaigrette ingredients. Toss with salad.
