My chewy dried fruit cookies strike the perfect balance between wholesome and delicious. If you’re like me, you love indulgent treats that are still a little healthier and super easy to make. My recipe is exactly that – with half the amount of sugar and whole wheat flour, and featuring tart, dried cherries, and crunchy pecans. It’s perfect for anyone who loves a fruity dessert that’s ideal for the whole family and great for the holidays too!
1/2 cup plus 1 tablespoon butter
1 egg
1/2 cup Haddar Brown Sugar
1/4 cup milk
1 and 3/4 cup Shibolim Whole Wheat Flour
1 teaspoon baking soda
1 teaspoon Gefen Salt
1 cup pecans, mix of chopped and whole
1 cup unsweetened dried cherries, chopped
Place the butter and brown sugar in a large bowl and beat with an electric mixer for two minutes until light and fluffy.
Add the egg and milk and beat to combine thoroughly.
In a small separate bowl, whisk together the flour, baking soda and salt.
Add half the dry ingredients into the butter mixture, combine fully, then add the remaining half and beat until combined. Do not overmix.
Stir in the pecans and dried fruit.
Use a small cookie scoop to portion out the cookie dough and then refrigerate for one hour.
Preheat oven to 400 degrees Fahrenheit and remove cookie dough from the fridge.
Make sure your cookies are spaced two inches apart on a cookie sheet lined with Gefen Parchment or silicone mat. Bake for eight to 10 minutes.
Allow cookies to cool for one minute on the cookie sheet before moving to a cooling rack.

I’ve heard that dried cherries are largely infested. Any recommendations for a specific clean brand?
Hi Stacey,
According to the CRC dried cherries need certification, and does not require further checking for infestation.
