Ingredients

Dried Fruit Cookies

  • 1 teaspoon baking soda

  • 1 teaspoon Gefen Salt

  • 1 cup pecans, mix of chopped and whole

  • 1 cup unsweetened dried cherries, chopped

Directions

1.

Place the butter and brown sugar in a large bowl and beat with an electric mixer for two minutes until light and fluffy.

2.

Add the egg and milk and beat to combine thoroughly.

3.

In a small separate bowl, whisk together the flour, baking soda and salt.

4.

Add half the dry ingredients into the butter mixture, combine fully, then add the remaining half and beat until combined. Do not overmix.

5.

Stir in the pecans and dried fruit.

6.

Use a small cookie scoop to portion out the cookie dough and then refrigerate for one hour.

7.

Preheat oven to 400 degrees Fahrenheit and remove cookie dough from the fridge.

8.

Make sure your cookies are spaced two inches apart on a cookie sheet lined with Gefen Parchment or silicone mat. Bake for eight to 10 minutes.

9.

Allow cookies to cool for one minute on the cookie sheet before moving to a cooling rack.

Use A Cookie Scoop: This handy kitchen tool helps you get perfectly uniform cookies.

Refrigerate Cookie Balls Before Baking: This process solidifies the fat in the cookies. This means that when the cookies are baking, it will take longer for the chilled fat to melt than room temperature fat which will help keep the cookies from spreading too much when they bake.

For Crispier Cookies: If you prefer crispy dried fruit cookies, bake for closer to 10 to 12 minutes.

Each cookie has 6 grams of added sugar; the remaining sugar is from the cherries.

To make these cookies vegan, use coconut oil in place of the butter, a flax egg in place of the egg, and your choice of dairy free milk in place of the milk.

To make these cookies gluten free, use gluten free oat flour.

I’ve heard that dried cherries are largely infested. Any recommendations for a specific clean brand?

Hi Stacey,
According to the CRC dried cherries need certification, and does not require further checking for infestation.
