I went through many years of breading plain schnitzel because my kids liked things simple. In the last few years, though, some of them became interested in more dressed-up versions of our staple, and I can finally add sauces. This one is a current favorite.
2 pounds breaded chicken cutlets, fried or baked according to your preference, cut into strips
1/2 cup Gefen Duck Sauce
3 tablespoons Haddar Brown Sugar
1–2 tablespoons Glicks Hot Sauce (depending on your spice-tolerance level)
Combine all sauce ingredients in a small saucepan. Bring to a low simmer.
Coat your pre-cooked chicken in the sauce. Optionally, top generously with sesame seeds.

What bread crumbs do you use?
Also do you simmer the sauce then fry it in the sauce?

In terms of your second question, no- you first bake or fry the chicken however you’d like, then you simmer the sauce ingredients together and coat the baked/fried chicken in the sauce.
