You know how it goes with grilling — you always end up eating much more than you usually do. So if you can’t decide whether you prefer chicken or meat, why not go for both? Delightful yet delicate, these
skewers will surely please your palate with their lineup of tasty morsels, all grilled to perfection!
Yields 12 skewers
1 pound (450 grams) chicken cutlets, thinly sliced
1 pound (450 grams) sandwich steak
salt, to taste
pepper, to taste
approximately 2 cups broccoli florets, such as Beleaves Frozen (24 florets)
12 baby bella mushrooms, cleaned and stems removed
approximately 1 and 1/2 cups mango chunks, such as Beleaves Frozen (24 1-inch/2 and 1/2-centimeter chunks)
Gefen Sesame Seeds, for garnish
4 and 1/2 tablespoons soy sauce (not low sodium)
3 tablespoons Gefen Toasted Sesame Oil
3 tablespoons brown sugar
3 cloves garlic, minced, or 2 cubes Gefen Frozen minced garlic
scant 1/2 teaspoon ground ginger
1 and 1/2 tablespoons rice vinegar
1 and 1/2 tablespoons hoisin sauce
1 and 1/2 teaspoons sriracha sauce
4 tablespoons oil
Soak skewers in water to prevent them from burning on the grill.
Cut chicken and steak into one-inch x two-inch (two and 1/2-centimeter x five-centimeter) strips and season lightly with salt and pepper.
Whisk together marinade ingredients and divide among two mixing bowls. Place chicken and meat in one bowl and vegetables in the other; toss both with marinade to coat. Marinate for 30 minutes.
Preheat grill.
Assemble skewers as follows: chicken, broccoli, meat, mango, mushroom, chicken, broccoli, meat, mango.
Grill for 10–12 minutes, turning occasionally, until fully cooked. Sprinkle with sesame seeds and serve.
