Diets A classic that can be enjoyed all year round.
1/4 cup chopped pecans
1/4 cup quick oats
1/4 cup brown sugar
1/2 teaspoon cinnamon
pinch salt
1/4 teaspoon apple pie spice
6 Cortland or Gala apples or any other firm baking apples
6 tablespoons margarine (soy-free if needed)
1 and 1/2 cups apple juice
1 tablespoon rum, or to your liking
2 cinnamon sticks
4 cloves (optional)
In a large bowl, mix together pecans, oats, sugar, cinnamon, salt, and apple pie spice.
Cut off a thin layer from the top of each apple. Core each apple and stuff with filling, pressing down firmly to pack it in. Top the apples with additional mixture.
Place the apples (standing upright) in a prepared slow cooker.
Place one tablespoon of margarine on top of each apple.
Pour apple juice and rum around the apples.
Place cinnamon sticks and cloves into the liquid. Cook on low for two hours.
Serve drizzled with caramel sauce, with a scoop of ice cream if desired.

Delicious, easy and healthy I made this in the oven on a low temperature for about 1-1/2 hours. It came out terrific. It reminds me of when I was little and my mom used to make it.
I didn’t have apple juice so I used about 1/2 cup of water. I also didn’t have whole cloves so I sprinkled a pinch of powered cloves into the water.
I’m definitely going to make it again.
