5 small whole beets
1/4 cup Tuscanini Extra-Virgin Olive Oil
juice of 1/2 lemon or 1 and 1/2 tablespoons Tuscanini Lemon Juice
3/4 teaspoon cumin
3/4 teaspoon Pereg Za’atar
3/4 teaspoon parsley
3/4 teaspoon basil
3/4 teaspoon salt
Preheat oven to 350 degrees Fahrenheit.
Roast whole, unpeeled beets for one hour. Let cool, then peel and dice. Toss with remaining ingredients.
