Diets Baking in the summer calls for summer fruits, especially berries. They are bite-sized, juicy and refreshing, sweet and also tart, and have beautiful, vibrant colors.
Mushka Rivkin sent me this yummy dessert, which is perfect for the summer. She wrote, “My mother has been making this pie for years. It’s so, so easy and a family favorite. The vinegar may seem surprising, but is very necessary; don’t ask me to explain the science. It’s perfect for super-easy summer hosting!”
1 and 1/2 cups Glicks Flour
3 tablespoons sugar
3/4 cup Earth Balance/margarine
1 and 1/2 tablespoons Gefen Vinegar
4 cups + 1/2 cup fresh blackberries, blueberries, and/or strawberries
1/2 cup sugar
3 tablespoons Glicks Flour
dash of Gefen Cinnamon
Mix crust ingredients until a doughy consistency is formed and press into a pie pan.
Mix the filling ingredients together except the 1/2 cup of berries. Pour into the crust.
Bake at 400 degrees Fahrenheit for one hour. Remove from the oven and top with the remaining berries.
