Diets I adapted my year-round chocolate chip cookie recipe to be pesachdige. These don’t rise, so you have to form them into cookie shapes before baking. These cookies went over like hotcakes with my kids.
3/4 cup oil
1 and 1/2 cups demarara sugar
2 eggs
1 teaspoon vanilla extract
1 and 1/2 cups matzah cake meal
1/4 cup potato starch, sifted
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup chocolate chips
Combine the sugar and oil. Mix in the eggs with a fork or whisk until well combined.
Next, add the flour, baking powder, and salt, and mix until combined. Add in the chocolate chips last.
Form cookie dough into cookies and place on a baking sheet. Bake at 350 degrees Fahrenheit for nine minutes.
