Diets This supper literally takes five minutes to put together. Just add a salad or side of roasted veggies and you’re good to go. No need to soak the matzos first!
16 ounces cottage cheese
2 cups shredded cheese like mozzarella or pizza cheese, plus more for sprinkling on top
1 egg
1/8 teaspoon ground black pepper
1 teaspoon oregano
1 teaspoon onion powder
1 teaspoon garlic powder
4 sheets square (machine) matzo such as Manischewitz
1 (24-ounce) jar Gefen Pasta Sauce
Preheat the oven to 350 degrees Fahrenheit.
In a bowl, mix the shredded cheese with cottage cheese, egg, and spices.
Pour sauce to cover the bottom of an eight-inch square pan. Add a matzo sheet. Spread over a thin layer of the cheese mixture, then add another matzo. Spread sauce over the matzo, then another layer of cheese mixture, matzo, sauce, cheese, matzo, and sauce again.
Sprinkle with a handful of shredded cheese. Bake at 350 degrees Fahrenheit for 30 minutes.
