This simple, airy cake is super easy to make, using a minimal amount of ingredients. This is very quick to whip up and can be eaten plain, or topped with some chocolate frosting, or some whipped cream and fresh fruit.
9 eggs, separated
2/3 cup sugar
8 tablespoons Manischewitz Matzo Meal
juice of 1/2 lemon
Beat egg whites until foamy.
Gradually add sugar, beating until stiff.
Add yolks, matzoh meal and lemon juice and combine gently.
Bake in a nine-inch springform pan over medium-low heat for one hour. When done, invert to cool.
