Diets 1 (16-ounce) box Tuscanini Penne Pasta
1/4 cup extra-virgin olive oil
10 cloves garlic, minced or 10 cubes Gefen Frozen Garlic
1 (6-ounce) can tomato paste
1 cup heavy cream
1/2 cup grated Tuscanini Parmesan Cheese, plus more for serving
1 teaspoon salt
Cook pasta according to package directions, reserving 1/3 cup pasta water. Transfer pasta to a large bowl and set aside.
In a saucepan, heat oil over medium heat. Add garlic and sauté one minute or until fragrant. Add tomato paste. Cook one minute, stirring constantly.
Add heavy cream and continue stirring until fully incorporated. Bring to a simmer.
Add 1/2 cup Parmesan and the salt, stirring until the cheese melts and the sauce thickens.
Add sauce and reserved pasta water to the pasta. Toss to coat. Sprinkle with extra Parmesan and serve immediately.
