My husband wanted the Trader Joe’s Shakshuka, but apparently we were out of it. I decided to create my own original recipe. My husband said it was the best-tasting shakshuka he’s ever had in his 37-year-young life.
oil for frying (4-5 tablespoons)
1/2 onion, diced
2 white mushrooms, sliced
1 tablespoon ground beef (I recommend Trader Joe’s groundless beef if wanting to keep dairy/pareve) (optional)
1/2 roasted red pepper, cut up
1 cup marinara sauce (I prefer Trader Joe’s or Barilla)
2 whole eggs
1 bagel, sliced in two (optional)
2 tablespoons cream cheese for bagel (if using real ground beef, then to adhere to kosher laws use pareve/non-dairy cream cheese)
Heat frying pan on medium heat with about two to three tablespoons of oil.
Add onions and cook about five minutes until golden brown.
Add mushrooms and (optional) ground beef and allow to cook another five minutes.
Add roasted red peppers and marinara sauce and cook another 30 seconds.
Mix and move mixture to allow 2 spaces for the eggs. Add 1/2 tsp oil in each spot, then add eggs. Keep on low and allow to cook until egg is white, not clear.
While cooking, toast bagel, if desired, to preference.
Remove and serve immediately with toasted bagel with cream cheese.
