Tortilla chips topped with chili, diced peppers, mushrooms, onions, and cheese. Easy recipe, very filling, and complete dinner as it includes a protein, vegetable, and starch all in one dish. This has been a go-to recipe in our family for years.
1 onion
2 tablespoons oil
1 red pepper
1 orange pepper
1 yellow pepper
1 (4 ounce) can mushrooms
1 (15.5 ounce) can chili beans
1 teaspoon paprika
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 tablespoon salt
large handful of shredded mozzarella cheese
tortilla chips (any type works, you can do spicy or regular)
Dice onions and sauté in oil for 15 minutes.
Dice all the peppers into small pieces and add.
Drain the can of mushrooms and cut them into smaller pieces.
Sauté everything till soft.
Once veggies are sautéed drain the can of chili beans and add to the pot.
Add all spices and salt.
Let cook for 15-20 minutes on the lowest flame.
Before serving, add cheese to the pot till it melts.
Serve immediately on a bed of tortilla chips.
