A welcome change from your typical snack or side.
1 large eggplant
3 tablespoons oil, such as Gefen Canola Oil
3 tablespoons Gefen Maple Syrup
1 teaspoon sriracha sauce
Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper.
Slice eggplant into circles, as thin as possible. Place on baking sheet in a single layer.
In a bowl, whisk together remaining ingredients. Drizzle over eggplant slices and spread evenly with the back of a fork.
Bake for 15 minutes. Flip each slice, drizzle and spread sauce, and bake for an additional 10 minutes.
Allow to set for 10 minutes for a crispier texture.
