Personalize this simple, unfussy cheesecake by changing up the cookies you use for the base. Try lemon cookies, graham crackers, sandwich cookies with cream… yum!
1 and 1/2 cups cookie crumbs
2 tablespoons sugar
1/2 cup butter, melted
24 ounces cream cheese, unwhipped
1 cup sugar
3 eggs
2 teaspoons Gefen Vanilla Sugar
1 tablespoon Heaven & Earth Lemon Juice
1/2 cup coconut
1 cup chocolate bits
1 cup chopped almonds
Combine ingredients for crust. Press into 9 x 13 inch pan.
Mix all ingredients for filling. Pour over crust.
Mix ingredients for topping, sprinkle over filling.
Bake at 350 degrees Fahrenheit for 45 minutes.
Chill, cut into squares.
