You think this batch is big enough? Think again. Something about a fresh batch of granola puts me in a generous mood, and I love to gift my nearest and dearest with little cute brown bags with scribbled messages! Besides, your kitchen will smell Ah-may-zing!
4 and 1/2 cups old-fashioned oats
2 cups mixed raw nuts – I like an assortment of whole and sliced almonds, cashews, and pistachio
1/3 cup pumpkin seeds (if prefer to leave out, add an additional 1/3 cup nuts)
1/2 cup unsweetened coconut flakes
1 teaspoon salt
1/2 teaspoon cinnamon
4 teaspoons pure vanilla extract
1/3 cup Gefen Pure Maple Syrup
1/2 cup Heaven & Earth Coconut Sugar
1/2 cup Tonnelli Avocado Oil
1/2 cup Estee’s Pure Foods Dark Chocolate Chunks or chips
1/2 cup dried cranberries, such as Gefen
Preheat oven to 325 degrees Fahrenheit. Line baking sheet with Gefen Parchment.
In a large bowl, whisk the maple syrup, coconut sugar, avocado oil, and vanilla together. Then add in remaining ingredients. Mix thoroughly.
Using a stiff spatula, press mixture down on a cookie sheet until nice and compact.
Bake until lightly browned, about 35 minutes, mixing halfway through. Turn oven off, sprinkle the chocolate chips and cranberry over the top and leave to cool off and crisp up in oven, even overnight.
Store granola on the countertop in a covered jar.
