Don’t let the title fool you into thinking this is one of those “I’ll try this when I don’t have time and will probably never try again” type of recipe. NO NO NO! These are the best sufganiot you will ever make! Enjoy these with your family and friends – it’s a keeper for generations to come!

2 and 1/4 cups of flour (see note)
3 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla extract or vanilla sugar
2 eggs
400 milliliters (14 ounces) of either sour cream/leben/yogurt/Greek yogurt/non-dairy equivalent (see note)
250 milliliters of heavy cream
2 tablespoons confectioners sugar
2 tablespoons of Osem vanilla pudding mix
Whisk the dry ingredients (flour, sugar, baking powder, baking soda, salt) in a bowl.
Add the rest of the ingredients and mix just until combined.
Batter will be rich and thick.
Heat oil in a wide pot on medium flame.
Once ready drop balls of dough using a small ice cream scooper (alternately you can use two spoons-DO NOT USE YOUR HANDS).
Fry three to four minutes per side and place on paper towel.
You can now roll them in sugar or confectioners’ sugar and fill with Jam but I like to top them with dairy whipped cream and lots of fun topping.
Beat all ingredients together for three to four minutes and pipe on top of the mini sufganiot as shown in the picture. Add as many toppings as you like. Choices include:crushed oreoslotus cookies or spreadcaramelall types and colors of chocolatesfruit jamscandiesfruitthe list is endless…
