Diets These bread-free sandwiches are little flavor bombs with protein and hydration, too. They’re a great finger food for adults and kids alike. Feel free to swap out the smoked salmon for tuna steak, leftover salmon, tuna salad, or any fish of choice. Putting these together is a great job to give older kids on a Shabbos afternoon.
Yield: 20
4 large Persian cucumbers, sliced
3 tablespoons high protein cheese spread, such as Quark cheese
Everything But the Bagel seasoning, such as Pereg, to sprinkle
1 (4-ounce) package quality smoked salmon, chopped
Top half the cucumber slices with cheese spread.
Sprinkle with seasoning. Add smoked salmon and cover with another cucumber slice.
If you like, secure with toothpicks.
