Diets Cucumbers always have that light, refreshing, soothing taste.
4 regular cucumbers, peeled and sliced thin
1 large onion, sliced
1/2 cup sugar
1 cup water
1/4 cup vinegar
salt, to taste
Place sliced cucumbers in a medium bowl. Add onion. Mix sugar, water, vinegar and salt and pour over cucumbers.
Refrigerate before serving. Best if made a day in advance, but can also be served immediately.
