These super cool potato-meat knishes are delicious! Feel free to use leftover meat to fill these knishes, and to omit the fried onions for the picky eaters. This is sure to become a family favorite! Yield: 15 to 18 knishes
1 large onion, sautéed in 1/4 cup Gefen Cottonseed Oil (or chicken fat)
5 medium potatoes, cooked and mashed
2 eggs, beaten
1/2 cup Manischewitz Matzo Meal or potato starch
1 teaspoon salt
1/4 teaspoon pepper, optional
1 cup finely chopped, cooked chicken, beef or liver
Gefen Cottonseed Oil, for frying
Combine first six ingredients, mixing well.
Form into balls, Using thumb, mark indentation in center of each ball. Fill hole with meat and cover with potato mixture.
Slightly flatten into patties and fry on both sides until golden brown.
