Here is a classic favorite that is still delicious every time. It takes only minutes to prepare and is a great healthy alternative to breaded fish.
Yield: 4 (based on a 5-ounce portion of fish)
1 cup Glicks Flour
1/2 teaspoon salt
1/2 teaspoon Tuscanini Black Pepper
juice of 1 lemon
4 fillets of sole
2 to 3 tablespoons butter or margarine
1/2 cup sliced almonds
Combine flour, salt, and pepper on a plate. Place lemon juice in a bowl. Rinse fish and pat dry. Dip each piece into the lemon juice and then into the flour mixture, coating evenly.
Melt butter in a heavy skillet over low heat.
Spread almonds evenly in the skillet and cook for about two minutes. Then place pieces of sole onto the almonds and cook for approximately three to four minutes over a medium flame (make sure flame is not too high, or almonds will burn). Flip fillets over and cook for another three minutes on the second side. Remove from heat. Scrape extra almonds off the bottom of the pan and serve with the fish.
