This is an exciting summer recipe for a few reasons. 1) Because there is so much flavor, and it’s not flavor that you need to work hard to achieve (yes, everything bagel spice and pesto dressing works well together, who would think?). 2) It’s a refreshing meal in one bowl, and isn’t that the perfect dinner in the summertime? Less to cook! 3) The whole wheat pasta totally works here. Yes, you can use regular, but there’s no need. There’s also enough components here that you have enough to go around for the picky eaters who don’t want this all together (i.e., you can make extra everything bagel chicken strips, or the whole box of pasta).
1 and 1/2 pounds thinly sliced chicken cutlets
3 tablespoons Gefen Olive Oil, divided
1 tablespoon Pereg Everything Bagel Spice
1 teaspoon salt
1 teaspoon garlic powder
1 and 1/2 cups raw whole wheat penne or rotini
12 ounces romaine lettuce
12 cherry tomatoes, halved
1/4 red onion, diced
1/3 cup lite mayonnaise, such as Gefen
6 cubes Gefen Frozen Basil
juice of 1 lemon
1/2 teaspoon salt
3 cloves garlic, crushed or 3 cubes Gefen Frozen Garlic
Prepare the chicken: In a bowl, combine chicken, one and 1/2 tablespoons olive oil, everything bagel spice, salt, and garlic powder.
Add remaining olive oil to a sauté pan or grill pan and heat over medium-high heat. Add chicken, in batches if necessary, and cook until cooked through, about three to four minutes per side for extra-thin cutlets. Slice into strips and set aside.
Meanwhile, prepare pasta according to package instructions.
Combine all dressing ingredients.
Assemble the salad: Combine romaine lettuce, cooked pasta, tomatoes, and red onion. Top with chicken strips and drizzle with dressing.
