Diets This extra-yummy take on the basic French onion soup is not only healthier, but super tasty too!
3 onions, thinly sliced
2 zucchinis, finely chopped
1/3 cup oil
2 tablespoons onion soup mix
2 teaspoons salt
1 teaspoon turmeric
2 tablespoons flour (I used GF flour)
8 cups water
Sauté onion and zucchini with oil until light brown.
In a separate bowl mix together onion soup mix, salt, turmeric, and flour. Add into the pot with the onions and zucchini.
Add in the water, bring to a boil, and then let the soup simmer on low for at least two hours.
