A refreshing salad of crispy greens is always the perfect accompaniment to any party or heavier meal. This low-fat dressing can also double as a dip for crudités and is even great as a dip for tortillas or ruffled chips. Yup, I tried it!
5 cups of your favorite lettuce, shredded
2 cups arugula, shredded
1 cup radicchio, shredded
2 scallions, sliced
1 English cucumber, peeled
1 cup plain Greek yogurt or leben
2–3 Gefen Frozen Garlic cubes, defrosted
1/4 cup vinegar (use gluten-free if necessary)
1 teaspoon lemon zest (optional)
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon black pepper
Grate the cucumber in a food processor or with a box grater into a fine shred.
Place all the dressing ingredients in a bowl and mix well until combined.
Pour over salad ingredients immediately before serving.
