I created these subs as a way to please the “older half” of the family all at once. They’re healthy, yet incredibly pleasing for the grownups. But these “loaded” type of sandwiches also look amazing and will tempt the teenagers too. I used the fresh chopped basil that comes in a little container rather than the frozen cubes. But if you’re using cubes, generally 1 tablespoon = 3 cubes. The basil in the container seems to have more liquid, so if you’re using cubes, adjust creamy pesto to desired consistency. Choosing a good bread is important to the success of any sandwich. Make sure to pick up something that you know your family likes. You can have great ingredients, but if the bread isn’t good, it will affect their overall enjoyment
1.5-2 pounds baby chicken
6 tablespoons basil
3 tablespoons olive oil
3 garlic cloves
1 and 1/2 teaspoons salt
3 tablespoons basil
1/3 cup mayo
1/2 teaspoon salt
1 clove garlic
1 tablespoon lemon juice
baguettes, whole wheat or regular, or bread of choice
2 sautéed red onions
2 avocados
balsamic glaze, optional
Marinate and cook the chicken.
Make the pesto.
Assemble the sandwiches.
