Fried Sushi Pizzas!

Ingredients

Rice Patties

  • 2 and 1/4 cups sushi rice, prepared to package instructions

  • 2 tablespoons rice vinegar

  • 1 tablespoon sugar

Avocado

  • 3 avocados

  • 1 and 1/2 teaspoons garlic powder

  • 1 and 1/2 teaspoons lemon juice

  • salt, to taste

  • pepper, to taste

For Assembly

  • 8 sticks Kani

  • oil, for frying

  • spicy mayo

Directions

Prepare the Patties

1.

Combine rice, sugar, and rice vinegar.

2.

Preheat a quarter inch of oil in a frying pan.

3.

Shape into eight patties.

4.

Slip patties into oil and fry on both sides until golden brown.

Prepare the Avocado

1.

Mash avocado until smooth.

2.

Mix with garlic, lemon juice, salt, and pepper.

Assembly

1.

Top each rice patty with a scoop of avocado and a shredded kani stick.

2.

Serve with spicy mayo and enjoy!
