Fruit Cocktail with Citrus Sorbet

I love this fruit cocktail any time of year. A few years ago it dawned on me that I can have this on Pesach too. I made lots and lots of it, kept it in a sealed container in the fridge, and the family enjoyed it throughout Yom Tov. I personally like it “marinated,” so you can make it a day or two in advance and let it sit in the fridge so the flavors get infused in the fruit.

Ingredients

Fruit Cocktail

  • 3 pears, diced

  • 1 apple, diced

  • 1 mango, diced

  • 1 orange, diced

Citrus Sorbet

  • 1 cup sugar

  • 1 and 1/2 cups freshly squeezed orange juice

  • 1 and 1/2 cups freshly squeezed grapefruit juice

Directions

Prepare the Fruit Cocktail

1.

Combine pears, apples, mango and orange in a large bowl.

Combine orange juice, sugar and wine and mix well. Pour over fruit. Refrigerate until serving.

Prepare the Citrus Sorbet

In a medium saucepan, bring three cups water and sugar to a boil, then turn down to low and simmer until sugar is dissolved. Remove from heat and let cool.

Mix orange, grapefruit and lemon juices and add sugar syrup. Mix gently until sugar and juices are well combined.

3.

Freeze until partially set. Break up the ice and blend until smooth. Repeat the freeze-and-blend step another one to two times for extra-smooth consistency.

4.

Serve fruit cocktail with a scoop (or three!) of sorbet over it.

Can i subsitute the heaven & earth lemon juice with Tuscanini lemon juice?
