Diets This eye-catching display of beautiful fruit minis is sure to be a conversation starter. The more variety you use, the prettier your arrangement will be. The best part is that you’re sure to please every palate. Go with varied creams and fruits, and everyone around the table will be happy. I used the cream toppings listed here, but feel free to check your local grocery’s baking aisle for more options. Yields 20 to 30 minis
2 sticks (1 cup) margarine
1 and 1/4 cups sugar
2 eggs
1 tablespoon Gefen Vanilla Extract
4 cups Glicks Flour
1 pinch salt
1 teaspoon Haddar Baking Powder
1/3 cup orange juice
vanilla custard
chocolate cream
caramel cream
lemon cream
halva cream
sliced fruit, any
Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper and set aside.
In a mixer, beat margarine and sugar on high speed until well combined. Add eggs, one at a time, beating until incorporated. Beat in vanilla.
In a separate bowl, combine flour, salt, and baking powder. Add to the mixer and beat again. Finally, add the orange juice and mix until a dough forms.
Roll out dough into large squares.
Place on the prepared baking sheet (you will need to work in batches) and bake eight to 10 minutes. The centers will appear soft but they will firm as the crusts cool.
Spread with cream of your choice, top with sliced fruit, and serve.
