This is the simplest way to make garlicky mashed potatoes. Serve alongside this delicious rib-eye steak.
Directions
1. Place potatoes and garlic in a medium saucepan; cover with cold water. Bring to a boil. Reduce heat and simmer 12 minutes or until the potatoes are very tender. Drain in a colander. Return to pan.
2. Add soy or coconut milk, oil, salt and pepper. Mash with a potato masher to desired consistency.
Variations:
Alternately, you can roast the garlic first and add the potatoes with the other ingredients.
