For years, I was looking for an oatmeal cookie that tasted like an oatmeal cookie should- yummy, cinnamon-y and wholesome. Most oatmeal cookie recipes were just glorified chocolate chip cookies with some oats thrown in. Finally after much searching and some tweaking, this margarine-free, yummy recipe was born. Anyone who tastes it, asks for the recipe. Hope you enjoy 🙂
1 and 1/2 cups flour (can use white whole wheat)
1 teaspoon baking soda
1/2 teaspoon baking powder
3/4 teaspoon salt
1 teaspoon cinnamon
1/2 cup sugar
1 cup lite brown sugar
1 and 1/2 cups old fashioned oats (not quick oats)
3/4 cup oil
2 eggs
1 teaspoon vanilla
optional but recommended addition- white chocolate chips
Preheat oven to 350 degrees Fahrenheit.
Combine all dry ingredients in a big mixing bowl.
Make a well and add oil, eggs, vanilla.
Mix well and add chocolate chips.
Make equal-sized balls (size depends on how big you like your cookies).
Bake 12-15 minutes.
