Diets Gingerbread people make a fun dessert to gift or present at a kiddush. Use royal icing and other candies to dress up these playful little people – you can go as simple or as detailed as you like.
1 stick margarine
3/4 cup dark brown sugar
1/2 cup Gefen Honey
2 eggs
3 and 1/2 cups Mishpacha Flour
2 teaspoons baking soda
1 teaspoon Gefen Ground Ginger
1 teaspoon nutmeg
1 teaspoon Gefen Allspice
1/2 teaspoon salt
royal icing
button candy
sprinkles
In a mixer bowl, cream margarine, sugar and honey until light and fluffy. Add eggs and mix until incorporated.
Sift together all dry ingredients, and add all at once to mixer. Mix just until combined. Dough will be quite sticky; you can refrigerate it for half an hour to make it easier to work with.
If rolling out immediately, use flour quite liberally. Roll dough onto Gefen Parchment Paper, cut gingerbread shapes, and peel away excess dough.
Bake 10 minutes. Do not over-bake or they will be very dry.
Allow cookies to cool before decorating. Decorate with royal icing and/or your favourite candies. Store in an airtight container.
Yields 36–48 cookies
