I’d often seen recipes for two-ingredient banana pancakes, but to me they tasted like a banana omelet. That’s why I was beyond excited when I played around with the recipe a bit and ended up with these crepes. Fill them with berries and Greek yogurt and you’ve got yourself a healthy and filling breakfast. I usually triple the recipe. Yields 2 crepes
1 egg
1/2 ripe banana
2 tablespoons oat flour (see note)
1/2 teaspoon Haddar Baking Powder
1/4 teaspoon Gefen Vanilla Extract
Blend egg in the blender until light and fluffy. Add banana, oat flour, baking powder and vanilla and blend until smooth.
Pour half the batter into a greased frying pan and tilt to spread. Cook on both sides. Remove and fill with whatever you’d like.
