I’d often seen recipes for two-ingredient banana pancakes, but to me they tasted like a banana omelet. That’s why I was beyond excited when I played around with the recipe a bit and ended up with these crepes. Fill them with berries and Greek yogurt and you’ve got yourself a healthy and filling breakfast. I usually triple the recipe.
Yields 2 crepes
Directions
1. Blend egg in the blender until light and fluffy. Add banana, oat flour, baking powder and vanilla and blend until smooth.
2. Pour half the batter into a greased frying pan and tilt to spread. Cook on both sides. Remove and fill with whatever you’d like.
Notes:
To make oat flour, simply place gluten-free oats into a blender and blend until they become a fine powder. I make a lot at a time and store in the freezer.
can I use almond or grain free flour?
