1 and 1/2 sticks plant based butter, room temperature
1 and 1/2 cups organic cane sugar (or any sugar, such as Gefen)
2 eggs
1 teaspoon Gefen Vanilla Extract
1 teaspoon Haddar Baking Powder
2 and 1/2 cups 1:1 gluten free flour
In a large bowl, whisk together the softened butter and sugar until creamed together.
Add the eggs and vanilla and whisk until smooth.
Add the baking powder and flour. Mix together until it forms a soft dough.
Let it chill in the fridge for at least 45 minutes (you could also stick it in the freezer for about 10 minutes).
Once it’s chilled, roll out the dough and cut into any shapes, or roll them into regular circle cookies. Sprinkle with your favorite toppings and bake on 325 degrees Fahrenheit for 12 to 15 minutes.
