This is fun gluten-free recipe that your kids can help make! Get the kids involved by crushing the crackers, measuring the ingredients, and coating the chicken tenders! They will be even more inclined to eat this yummy dinner since they helped make it! A big bonus is that these chicken tenders are baked, not fried, yet still come out extremely flavorful and tender!
1/2 cup seasoned gluten-free bread crumbs
3 eggs
1 package chicken tenders
1 teaspoon garlic powder
1/8 teaspoon paprika
1/4 teaspoon oregano
1/4 teaspoon thyme
1/8 teaspoon kosher salt
1/8 teaspoon black pepper
ADULTS: Please preheat oven to 350 degrees Fahrenheit.
Have the kids crush the gluten free crackers in a food processor in three batches. Make sure when processing not to overprocess. (I know you like to “push the button.”)
This is a great opportunity to learn measurements. Have the kids help measure the bread crumbs and the spices.
Remove the crushed crackers and add them to a large mixing bowl. Add bread crumbs and seasonings. Toss well!
In a separate bowl, beat the eggs with a fork.
Dredge a few chicken tenders at a time, first in the bread crumbs, then in egg, then in the bread crumbs again. Transfer to greased cookie sheet.
Repeat step six until all tenders are breaded and on the cookie sheet. Spray top with cooking spray.
Bake for six minutes. Remove; flip and spray again.
Bake an additional five minutes. Remove and let cool.
